Why when we grow old our hair turn white?

The melanocytes that produce the pigment located at the base of every hair follicle start to shut down in old age (as do a lot of things) and as older dark hairs fall out, they are replaced by white hairs.

it just runs out of ink (melanin)

Because the blood doesn't carry the coloring agents after a while. Hair can also trun gray as a result of sudden stressfull events or news.
